Gorgonzola Dolce del Bacco is a Protected Designation of Origin (PDO) blue-veined artisan cheese from Lombardy and Piedmont, Italy. It has a straw-white color, is soft and creamy textured, and contains greenish streaks created by the unique "erborinatura" process. The cheese comes in two varieties: dolce for its delicate taste or natural for its more intense flavor.
